Ordering & delivery

How do I order?

Tap Order bread to open the shop. Pick your loaves, pay online, and your bread is baked and delivered on bake day.

When do orders close?

Friday at 11:59 PM for that weekend's bake. The next bake date is always posted at the top of the homepage.

Where do you deliver?

The Morris County region. Outside the area? Tell me where you are and we'll work something out.

What if I'm not home on delivery day?

Add a note to your order saying where to leave your bread, like the front porch or a side door. A good crusty loaf is happy outside for a few hours.

Can I change or cancel my order?

Yes, before the Friday 11:59 PM cutoff. Email me and I'll sort it out. After that, your dough is already fermenting.

The bread

What makes your bread different from supermarket bread?

Three ingredients: flour, water and salt. A 24 to 48 hour wild sourdough ferment. Organic grain, grown regeneratively and stone-milled at Marksboro Mills about 30 miles away. Most supermarket bread starts with commodity flour of unknown origin and a two-hour rise.

Is sourdough easier to digest? Is it gluten-free?

The long ferment breaks down some of the gluten and starches, and many people find it easier on the stomach. It is not gluten-free, so it isn't safe for anyone with celiac disease.

Do your breads contain allergens?

All breads contain wheat. The Cranberry Walnut contains tree nuts. Everything is baked in the same kitchen, so I can't guarantee any item is free of nuts or other allergens. If you have a specific allergy, email me before ordering.

How should I store it? Can I freeze it?

Keep it cut-side down on a board, or in a paper or cloth bag, for 2 to 3 days. Skip the fridge, which goes stale faster. To freeze, slice it first, bag it airtight, and toast slices straight from the freezer.

Do you sell wholesale to farms, markets or cafes?

Yes. Farm stands, farmers markets, cafes and CSAs. Email me at michael@michaelbakes.com with what you have in mind. Pricing is quoted personally based on what you need.
