A chef who fell for bread.
In professional kitchens I learned that the best food doesn't come from complexity. It comes from the integrity of the ingredients.
My focus was always culinary, but I was captivated by bread: the timeless staple that centers a meal. When I finally made bread my work, it wasn't a pivot so much as a deepening of my obsession with quality. I fell in love with the alchemy of turning grain, water and salt into something alive.
Today I bake at Marksboro Mills, right where my flour is stone-milled. The dough is mixed and prepped the day before, given a long, slow fermentation, and baked fresh for delivery in the Morris County region.
